The historic Hôtel du Cerf dating from the 17th century is situated in the heart of the pretty little village of Sonceboz on the "Watchmakers' Theme Route" from Bienne to La Chaux-de-Fonds. The hotel radiates warmth and its rooms are both comfortable and quiet. What the Hôtel du Cerf is most famous for, however, is its excellent cuisine. For their creations centred on the freshness of the ingredients, chefs Jean-Marc Soldati and Christian Albrecht have won 16 points in GaultMillau and a star in the Guide Michelin. Even if the oldest written records of the Hôtel du Cerf date from the late 19th century, the building is known to be much older than that, with roots going back to the 17th century. The proprietors took a conservative approach to the building's renovation and went out of their way to preserve its authenticity. This is much the same philosophy, incidentally, as that they bring to bear when buying ingredients for their excellent cuisine.
